PRODUCTION AREA: Vulcano Island, Aeolian Islands (ME) - Sicily, Italy.

TASTING NOTES: The wine is ruby red with violet reflections. Fruity with notes of cherry and raspberry with a good structure.

HARVEST: The grape harvest takes place in the first week of September. After a careful selection, the grapes are hand picked, placed in crates and immediately transported to the cellar to be processed. 

PRODUCTION PROCESS: The bunches are de-stemmed and transferred to the vinification tank, where a pre-fermentation cold maceration takes place at 6-8° C for 24 hours (with the aim of increasing the arormatic richness), then they are left to macerate and fermented for about 7- 8 days at a temperature of 16-18° C. The wine obtained is left to mature in wooden barrels.

ALCOHOL CONTENT: 13% Vol.

SERVING TEMPERATURE: 16°C

PAIRINGS: Red meats, in particular grilled game and roasts with a strong flavour, grilled.
